Nutrition Fall Intern (Unpaid)

Nutrition Intern (UNPAID)

General Summary
The goal of the Nourish Project is to provide educational resources focused on nutrition for pre-diabetics and type-II diabetics for Asian cuisines. We create healthy and culturally relevant meal ideas for eating at home and eating out. You will be mainly working with dietitians, registered nurses, co-interns, and Dr. Minal Moharir, MD, Clinical Assistant Professor of the Occupational Health Center at Stanford University.

This project is continually evolving and requires interns to be flexible and adaptable.

Upon satisfactory completion of 400+ hours of internship work, letters of recommendation and/or references will be written by Minal Moharir, MD, after performance reviews.
 
RESPONSIBILITIES
  • Contributes to the design and implementation of a plan in nutrition care
  • Design weekly food menus based on needs
  • Design posters on easy food substitutions 
  • Creates culturally sensitive health resources for Asian subgroups
  • Research: Coordinates extensive literature review with guidance on healthy eating for populations with pre-diabetes and Type 2 diabetes 
  • Attends weekly/biweekly team meetings
 
SKILLS AND ABILITIES REQUIRED
  • Relevant experience in healthcare and/or health equity initiatives and/or nutrition
  • Knowledge of metabolism in relation to nutrition.
  • Knowledge of macro/micro-nutrition composition.
  • High level of analytical abilities to plan individual nutrition programs, and to discriminate new product claims and their physiologic effect
  • High level of interpersonal skills necessary to provide counseling to end-users and their families on nutrition related issues.
  • Ability to work in a changing environment
  • Excellent teamwork skills
 
WORKING CONDITIONS
  • 5-10 hours per week
  • Work remotely with meetings on zoom.
